A Message From Our Founder

I am Yohay Wakabayashi, Founder & CEO of Maison Rococo Corporation.
Thank you sincerely for your interest in "ROCOCO Tokyo."

I am proud to share that since our launch, through a close collaboration with chefs
and sommeliers, ROCOCO has become Japan's first luxury beer, now served in all 47 prefectures and over 1,000 fine dining restaurants, luxury hotels, and ryokan.

ROCOCO elevates the fine dining experience by making restaurants proud to serve beer
and fine dining customers proud to order beer.
Brewed in Shizuoka using only the finest ingredients and the naturally purified water of Mount Fuji,
ROCOCO is bitterness-free, with a smooth, delicate texture and gorgeous aroma
reminiscent of a fine white wine. ROCOCO is the only beer in Japan created specifically to enhance the fine dining experience.

I am always willing to learn from you and always willing to answer questions you may have.
Our dedicated staff will personally guide you through every step of the onboarding process.
We sincerely hope ROCOCO will become a part of the special experiences you create for your guests.

The Benefits of Choosing ROCOCO Tokyo

Functional Benefit

The Ideal Opening Drink to Complement Delicate Cuisine

ROCOCO's smooth, fruity, non-bitter profile appeals even to non-beer drinkers. Its delicate taste and fine carbonation prevent fullness, easing a natural transition to wine or sake later in the course. Made exclusively with the highest quality natural ingredients and no additives, ROCOCO is unfiltered and non-heat-treated to keep it as pure and fresh as possible — aligning with the high standards of fine dining. Sommeliers often include ROCOCO on pairing menus due to these characteristics. Each bottle yields two glasses, making it ideal for sharing.

Emotional Benefit

A Luxury Beer Developed Exclusively for Fine Dining

Avoid disappointing your customers with the regular beer options they see at their grocery or convenience stores. One detail can disrupt a perfect experience. ROCOCO is not available in traditional retail such as convenience stores, grocery stores, liquor stores, or department stores — so customers will never feel they are overpaying for ROCOCO at your restaurant. ROCOCO was created for carefully selected restaurants like yours, and helps transport guests into an extraordinary experience from the very first sip.

Economic Benefit

Over Twice the Profit Margin of a Commercial Beer

Fine dining restaurants who opt not to sell ROCOCO are missing an opportunity to make more money while pleasing their customers. ROCOCO offers a higher yen margin per bottle sold. Selling just 5 bottles per day for 240 days can boost your restaurant's annual profit by over ¥600,000 compared with a commercial beer. Your staff simply pours ROCOCO into the ROCOCO Tokyo GLASS or an available white wine glass — and you can reinvest your extra margin where it matters most.

The Ultimate Recipe Guided by the Spirit of Minimalism

ROCOCO is Japan's first luxury beer, created specifically for fine dining. We spent one year researching the market to discover key problems relating to beer in fine dining. To attain the highest quality by global standards, we collaborated with Dr. Hugo Patino, a world-leading expert with over 30 years of experience developing beer recipes in California — the global hub for cutting-edge brewing technology. Over 18 months, we continuously refined the recipe based on feedback from fine dining restaurants and customers.

Brewed in Shizuoka using only the finest ingredients and the pure spring water of Mount Fuji, this beer is bitterness-free, with a smooth, delicate texture and gorgeous aroma reminiscent of a fine white wine.

During development, we were deeply inspired by the Japanese aesthetic of "wabi-sabi." Kaiseki chefs taught us to embrace minimalism — removing distractions to elevate ROCOCO's purity and refinement. The result is a recipe that complements and elevates the delicate flavors of fine cuisine without overpowering them.

Fuji Premium Brewery Has Been Brewing ROCOCO Since Our 2018 Launch

The delicate flavor and uncompromising quality of ROCOCO are made possible by our close partnership with FUJI PREMIUM BREWING Co., Ltd. (Gotemba City, Shizuoka Prefecture),
which sits at the base of Mount Fuji.

Led by Brewmaster Yuko Shiga, the brewery team blends traditional Japanese craftsmanship with modern brewing science.
In 2019, the brewery underwent a full modernization and now features advanced ingredient analysis systems and state-of-the-art quality control equipment.
Every batch of ROCOCO is rigorously tested to ensure consistency and precision at the highest level.

The pairing of Mount Fuji's natural spring water with flawless execution of the ROCOCO recipe is the foundation of our ambition, and a key reason why more and more chefs and sommeliers trust ROCOCO to delight their customers.

3 Reasons We Recommend Our Signature White Wine Glass Serve

1

To Enjoy the Fruity and Elegant Aroma

Although ROCOCO is a beer, it is characterized by the absence of bitterness and a smooth, delicate texture with a fragrant aroma reminiscent of fine white wine.
To fully capture and enjoy this aroma, we recommend serving it in a white wine glass.

2

To Further Enhance the Fresh and Rich Flavor

ROCOCO is an unfiltered, unpasteurized draft beer, so it is always refrigerated at 1–5°C after brewing to maintain its fresh flavor.
Using a glass with a stem (like a white wine glass) prevents body heat from raising the temperature, keeping the beer cold and at its perfect drinking temperature.

3

To Give a Sophisticated Impression

A drink for special moments should look elegant as well. ROCOCO served in a white wine glass instantly conveys a refined impression,
making it the perfect luxury beer for those special occasions. Not only does it fully bring out the beer's potential, but enjoying it in a beautiful, elegant glass adds to the experience.
