A Message From Our Founder

Inspired by Onko Choshin — The Challenge That Became ROCOCO

I founded ROCOCO in 2018 to elevate Japan's fine dining experience, inspired by the principle of Onko Choshin—learning from the past to create something new.

I am proud to share that since our launch, through a close collaboration with chefs and sommeliers, ROCOCO has become Japan's first luxury beer, now served in all 47 prefectures and over 1,000 fine dining restaurants and luxury hotels and ryokan.

This journey is deeply personal. My grandfather was the president of a major Japanese trading company and my father led the Japan office of a global marketing firm. Their leadership shaped my path. At age 10, I was sent to boarding school in the U.S. without knowing English. For years, I lived among people who knew little of Japan. Even then, I saw how Japanese cuisine earned admiration from people around the world. It became a key source of identity and pride.

After returning home with a marketing degree, I remembered feeling uncertain about ordering beer in fine dining—worried it seemed inappropriate. I realized many others felt the same. That insight drove me to devote myself to contributing to fine dining by creating ROCOCO.

After all these years I remain committed to fine dining. I personally requested the removal of barcodes from our bottles—ROCOCO is not meant to be scanned at cash registers. Feel free to turn a bottle over and see for yourself.

Hidefumi Namba
Master Chef of "Sushi Namba"

Born in 1974 in Suginami, Tokyo. He began his career as a sushi chef at age 20, training at several renowned sushi restaurants before opening his own in Ogikubo in 2007. In 2011, he relocated to Asagaya, and in 2018 expanded to Tokyo Midtown Hibiya. He is highly acclaimed both in Japan and abroad for his meticulous technique of adjusting the temperature of the neta and shari for each piece, as well as his pursuit of delicate, refined flavors.

Nobuto Suehiro
Owner-Chef of "Maki Tori Shin Kobe" | "Suzuta Shiki" | "Azabu Muroi" | "Jigen Do" | "Nikushō Horikoshi" | "Atami"

Born in Tokyo in 1985. After graduating from high school, he pursued a career in culinary arts and opened Nikushō Horikoshi in 2015. Since then, he has launched a series of acclaimed restaurants and currently serves as the owner-chef of six establishments. He was profoundly inspired by the open-fire cuisine he encountered at the renowned Singaporean restaurant Burnt Ends, and upon returning to Japan, he established a new genre of wood-fire cooking. Known as a master of wood-fire grilling, his technique explores a dialogue between fire and ingredients, opening up new possibilities in modern Japanese cuisine.

Masaharu Hatayama
General Manager / Chef Sommelier, AZUR et MASA UEKI

Serves as General Manager and Chef Sommelier at the two-Michelin-star restaurant.

· Active in training and developing the next generation as a lecturer at vocational schools and other institutions

Kenta Takahashi
Founder, OMAKASE

After graduating from the Faculty of Economics at Keio University, he joined McKinsey & Company in 2010, where he worked on projects involving marketing analytics and M&A due diligence. Starting in September 2012, he joined the private equity firm MBK Partners, where he was involved in investment projects for Komeda Coffee, TASAKI, Universal Studios Japan, and Godiva. In 2022, he began pursuing individual investment activities in earnest and became the 100% shareholder and a director of Happies Inc. in the same year. He is also known as a founding shareholder of the restaurant reservation service OMAKASE. In 2024, he co-founded Boost Capital, where he currently serves as Director and Partner. In May 2025, he earned his Master of Business Administration (MBA) from the Massachusetts Institute of Technology (MIT).

Launch of "ROCOCO Tokyo", Japan's first luxury beer, in select fine dining restaurants and luxury hotels and ryokan in Japan. ROCOCO is the only beer created specifically to enhance the fine dining experience.

Dec. 2020

CEO Yohay Wakabayashi publishes his first book: "Changing Japan with Luxury Beer: The Story of how we sold our Beer in Over 100 Michelin Starred Restaurants in Japan Within One Year from Launch."

Appearance on the famous TBS TV program "Gacchiri Monday!"

Jul. 2022

ROCOCO Tokyo launches in select fine dining restaurants in Singapore, marking the first time it is available outside of Japan.

Dec. 2022

Launch of our original luxury beer glass, the "ROCOCO Tokyo GLASS."

Nov. 2023

ROCOCO Tokyo launches in Taiwan.

Apr. 2024

ROCOCO becomes the only beer offered at the bar counter of the ANA SUITE LOUNGE, Haneda Airport's International Terminal 2.
